Black Bean, Corn and Beef Enchiladas

Well I based this off of a frozen entree at Trader Joe's but it was super yum from scratch.

Corn tortillas
Red enchilada sauce (I used canned)
1 can whole Black beans, rinsed
1 can sweet corn
2 med zucchini, diced very small and sauted to soft
1 pkg ground beef (can use any ground meat or tofu even), browned and seasoned with salt, pepper and a pinch of cayenne.
4 oz cheddar cheese, grated
4 oz Jack cheese, grated combine both cheeses together

sour cream
salsa

In a casserole dish pyrex spead several spoonfuls of the sauce on the bottom then place tortillas,you can tear them if needed to cover most of the bottom of the pan, don't worry if there are some bare spaces. Then layer the ground browned meat then black beans, then corn, then zucchini then cheese. Then start again same order tortillas, sauce, meat, beans, corn, zuc, cheese. Then top with tortillas, pour the rest of the sauce on top all over, top with cheese. Bake about 30-45 min 350 degrees or cheese is starting to brown and bubbling hot. Let rest 5-10 minutes before eating. Top with sour cream, salsa even black olives and green onions would be good. It was even better the next few days.
