Well I am not sure about the name for this one, but it did taste good.
5 thinly sliced boneless pork chops
5 med zucchini, diced med
1 small onion, diced med
10 small red potatoes, diced med
Place potatoes in a microwave safe bowl cover with water and then plastic wrap the bowl poke holes and place in microwave for 5-6 minutes on high.
In a large saute pan with 1T olive oil saute onions until just browned on all sides. The key to good caramelized onions is let them be. Do not mix a lot just put them in the pan and do something else and then come back when you just begin to smell them and give them a stir and them let them be and again in a few minutes come back and stir. They will be all translucent and browned and yummy. Set these aside in a bowl
While these are cooking saute zucchini in a second saute pan until they are just fork tender add to bowl with onions.
Take potatoes out and in the second saute pan with olive oil saute on med heat until brown and yummy. Remember let them be. These will cook about 15 minutes.
In the onion pan after they are finished, add 1-2T butter then lay the pork chops in and saute. Season first the pork chops I used Emerils seasoning and garlic salt, but whatever you like. Saute on each side about 3-5 min don't over cook. Let these rest on a cutting board. After about 5 minutes cut into bite size pieces.
In the pork chop/onion pan add 1T oil or butter allow to heat then add 2T flour and whisk for 1-2 minutes then add 1 C stock (I used beef but it is what I had in the fridge to use) Whisk until all lumps gone and starts to thicken.
Pour sauce over entire bowl of stuff. Serve and eat.
