Pork Tenderloin Stir Fry with Brown Rice

You can vary the veggies on this too.

1 pork tenderloin, sliced thin (no need to season with salt due to soy sauce, but can use 5 spice or something like that, I just left it plain)
2T grated peeled fresh ginger
1C chicken broth or stock
2T teriyaki sauce
2T lite soy sauce
2t cornstarch
2t canola oil
8oz snow peas, fresh or frozen and thawed then strings removed
2med zucchini cut in 1/2 then sliced thin
3 green onions, cut in 1/2 inch on the bias long cuts.

Saute the veggies in 1T of oil until just cooked thru and set aside
Mix sauce (broth, teriyaki and soy sauces and cornstarch) and set aside
Saute meat and ginger in same pan with remaining oil until just cooked also and add to veggies.
Pour sauce in same pan and simmer until it reduces and thickens
Add meat and veggies to sauce until heated thru and coated evenly.

Serve over steamed brown rice.
