Tuna Noodle Casserole - one of the classics

This dish is one that is easy and both my kids will eat.

2 cans Tuna in Water Light or white meat is fine
1 can cream of celery fat free
1 can cream of chicken fat free (you could use mushroom here for veg. version)
1/2 C fat free milk
1 package of noodles about a pound (any you have on hand is fine)
Crackers
Cheddar cheese

I cooked the pasta (6C water for 1 pound pasta is usually good, but you don't have to measure just make sure you have more than double the water to pasta so that it does not get too sticky and it also helps it cook more evenly) in boiling salted water to al dente or just right, do not over cook since you are going to bake this dish. Then place the pasta in a baking dish - I used a large casserole Pyrex dish. Add the canned soups and milk and stir to combine. Then add tuna (drain the cans of the water first) and mix. Then crush crackers and spread on top then grate cheese and layer that on top of the crackers. Bake in the oven 350 degrees for about 20-30 minutes or until just browned. You will not need salt for this recipe due to the high amount of sodium in the canned soup but you may want to add some pepper to taste. I also like salsa and/or hot sauce on top as a condiment. This dish is great the next day. I served it with a green salad.
