Mexican Tortilla Soup

Here is another version that I think is good of tortilla soup. There are so many ways to make this soup, I love many versions. With all soups add what veggies you like and enjoy.


1 1/2lbs cooked, shredded chicken (baked with salt and pepper then shredded)
1/4c veg or olive oil
2 quarts chick stock or broth
1 onion chopped
4 garlic cloves, minced
1/2c cilantro, chopped
1 can chopped tomatoes
1/2 jalapeno, seeded and chopped (optional for heat)
1-4t chipotle chile in adobo sauce
1 lime juiced 1/4c orange juice
Garnish with all or some: dollop of sour cream, sliced avocado, shredded cheese, sliced radishes, chips or fried corn tortilla strips (if you like you can make them homemade)


In large stock pot, saute in oil 1/2 the onion until clear. Take remaining 1/2 onion, tomatoes, and garlic and puree in blender then add to pot. Then add broth, jalapeno and adobo sauce. Bring to a simmer for 20 minutes. Add chicken and cilantro. Serve with garnish.
