This is a recipe I based from a magazine. It is really fast and easy, smokey and spicy. Great for a fast yum dinner.
3 cans of black beans, rinsed and drained
2-14.5oz cans diced tomatoes
2 chipotle chilies in adobo sauces
2t adobo sauce (from can of chilies)
2T olive oil
1# ground beef ( can use any ground meat or meat alternative)
Salt and Pepper to taste
1 Large red onion, diced small
1 1/2 T chile powder
2T cumin
2 limes juiced
1/2 C rough chopped cilantro
1 ripe avocado diced
Sour Cream
In a blender or food processor puree 1 can of beans, 1 can of tomatoes ( for those who do not like to see the tomatoes use both cans here) chipotle chilies and adobo sauce and blend until smooth.
In a saute pan brown meat with 1T of olive oil, then drain off grease. Add all spices and 3/4 of the diced onion. Saute until the onion begins to soften then add remaining cans of beans and tomatoes heat thru about 2-3 minutes then add bean/tomato puree. Heat for another 5-10 minutes then add the juice of one lime, stir and serve.
For garnish combine remaining lime juice, onion, cilantro and avocado. Place a dollop of sour cream in the center of each bowl, then a spoonful of the avo/onion mixture. stir this in before eating. I brought this for lunch at work and just had a side container of the garnish including the sour cream all together and it was great.
Can serve cornbread on the side or tortilla chips.
Good and smokey
To reduce the heat in this chile, use half of the chipotle chilies, deseed the ones you do use and use half of the chile powder.
